How to Cook Indian Onion Bhaji

Ingredients

* 4oz Graham flour
* 2 onions, roughly chopped
* 1 teaspoon of fresh coriander, chopped
* ½ teaspoon of turmeric
* chillis (to taste), de-seeded and finely chopped
* a pinch of salt and pepper
* 1 cup of water
* Oil, for frying

Steps

1. Sieve the gram flour into a bowl and then add all the ingredients.
2. Mix together thoroughly whilst dry.
3. Add water gradually, mixing it in a bit at a time. You want a mixture that is just gloopy enough to dribble off a spoon.
4. Deep fry in batches for 2-3 minutes, until golden brown.

Tips

* These are good served with chutney for dipping, as a snack.
* If you've any left over the next day, try roughly chopping them up and dropping them on your salad.
* Some people add chopped mint along with the corriander, for a nice bite.
* Usually, you'll only need 1-2 chillies, but some people like it hot! Don't go over 4 chillies, though.
* Of course, you can get rid of the chillies altogether; just replace them with a bit of chilli powder, or pepper.

Warnings

* Keep in mind, this is Indian street food; if serving a fancy lot, opt for a curry instead.
* Be very careful around the hot oil!
* Make sure to wash your hands very well after handling the chilli peppers.
